Honey Lime Chicken Thighs
With the summer months quickly approaching, here is a boneless chicken thigh recipe that will leave you craving more. We eat a lot of chicken and I am always looking for new recipes to try out. Add a spice rub to your chicken and finish it with a honey lime glaze. Full of sweet and tangy flavor. You can’t go wrong when cooking with chicken thighs, they always seem to come out juicy and tender. They are perfect when cooked in the skillet, oven or on the grill. Leaving you with endless options. If you’re not quite a fan of chicken thighs, this recipe will also work great for any cut of chicken.

INGREDIENTS
- 1 ½ lbs boneless skinless chicken thighs
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp salt
- 1 tsp pepper
- 1 clove of garlic minced
- 2 Tbsp olive oil
- ½ cup honey
- 2 Tbsp soy sauce
- 1 cup lime juice (1 small lime)
- Lime zest (1 small lime)
INSTRUCTIONS
- Place skillet on medium heat and add olive oil.
- Combine salt, pepper, chili powder and cumin in a small bowl. Rub the mixture on to chicken and place in the skillet.
- Cook chicken on each side for 5-7 minutes or until no longer pink.
- Remove chicken from the skillet and set aside
- Add honey, lime juice/zest, soy sauce, and garlic to skillet.
- Bring to a boil over medium heat. Reduce heat and whisk until the mixture starts to thicken for about 2 minutes.
- Place the chicken back into the skillet and coat with the sauce.
- Garnish with lime slices and fresh cilantro.
The honey lime glaze was the perfect finishing touch to the seasoned chicken. If you’re in the mood for further zesty lime flavor, try pairing this with cilantro lime rice. Hope you enjoy!
