Instant Pot Beef Stew

An Instant Pot is an amazing gift and I received one for Christmas! Shout out to my sister for knowing me so well and my love for cooking! An Instant Pot is a programmable pressure cooker that essentially speeds up the cooking process while still creating delicious meals. I can create a yummy meal in a matter of minutes, instead of the hours it can sometimes take.  While I still love my Crockpot, the Instant Pot brings things to a whole new level. I have tried a few recipes, with the most recent being beef stew. I created this tasty stew in less than an hour. Beef stew in a crockpot can take up to 6 hours or more. The beef and veggies all came out so tender and full of flavor.

INGREDIENTS

  • 2 lbs. beef, cubed
  • 2 cups baby carrots
  • 5 red potatoes, chopped
  • 1 cup peas, frozen
  • 1 cup corn, frozen
  • 2 cloves garlic, chopped
  • 1 yellow onion, chopped
  • 32 oz chicken broth
  • 6 oz tomato paste
  • 2 tbsp worcestershire sauce
  • 1 tsp oregano
  • 1 tbsp parsley, dried
  • 1 tsp pepper
  • 1 tsp salt
  • ¼ cup flour
  • ¼ cup water

INSTRUCTIONS

1.      Place all ingredients into the pot, except for the frozen peas, corn, flour and water.

2.      Stir until all ingredients are mixed well.

3.      Put lid on and place in locking position with seal valve in the closed position.

4.      Turn Instant Pot on and select (Meat/Stew) selection for 35 minutes on high pressure.

5.      After cooking time is complete, wait 12 minutes for the pressure to release naturally from the Instant Pot. After that time switch seal valve to the vent position.

6.      Once the pressure is release, add corn, peas, water and flour.

7.      Stir for 3-5 minutes until stew the thickens.

This pot of stew produced more than enough for a family of 4. You know I love when I have enough leftovers for lunch the next day. My son enjoyed every bite! It is definitely a mom win when your kid doesn’t complain about how many vegetables they have to eat at dinner. Hope you all enjoy!
