Turkey Taco Bowl Meal Prep

Meal prepping has become a saving grace in our house. It is so convenient to prep meals ahead of time allowing for quick grab-n-go lunches. It also helps us save that precious lunch money! Turkey taco bowls are on the menu this week. Each bowl has lean ground turkey meat, corn, black beans, lettuce, and tomatoes. Add or take away toppings to better customize to your liking.

INGREDIENTS

  • 1 lb. ground turkey
  • 1 can corn
  • 1 can black beans
  • 1-pint cherry tomatoes, diced
  • 1 cup lettuce, shredded
  • 1 taco seasoning packet (or seasoning of your liking)
  • ¼ cup cheese, grated

INSTRUCTIONS

  1. In a large skillet, cook the ground turkey for about 10 minutes or until thoroughly cooked.
  2. While turkey is cooking, mix in the taco seasoning and break up any turkey chunks.
  3. Shred the lettuce.
  4. Chop tomatoes.

To Assemble Taco bowls:

  • ½ cup taco meat
  • ½ cup corn
  • ½ cup black beans
  • ¼ cup lettuce
  • ¼ cup tomatoes
  • Sprinkle grate cheese on top to finish.

Tip: place the grated cheese, lettuce, and tomatoes into separate containers or Ziploc bags to prevent the entire bowl from getting soggy.

Heat your bowl up in the microwave for 1-2 minutes, mix your toppings together and enjoy!
