Chicken Quesadillas

Craving Mexican? Try these cheesy chicken quesadillas. I used to have quesadillas on the regular when I worked right across the street from a local Mexican restaurant. That was dangerous for my wallet. While their quesadillas were delicious, it is always so satisfying when you can create one of your favorite dishes right from the comfort of your home! Being a lot cheaper helps too. Create and customize your own quesadillas with your favorite fillings.

INGREDIENTS

  • 4 chicken breasts, shredded
  • 1 cup Monterey-Jack cheese, grated
  • 1 cup Cheddar cheese, grated
  • 8 flour tortillas
  • ½ cup olive oil
  • 1 taco seasoning packet
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • salt and pepper to taste

INSTRUCTIONS

  1. In a large skillet, pour ¼ cup of olive oil over medium heat.
  2. Season chicken breasts with salt, pepper, onion and garlic powder. Place in the skillet.
  3. Cook over medium heat for 4-5 minutes on both sides, until golden brown.
  4. Move chicken to a cutting board to shred.
  5. Using another skillet, pour a small amount of olive and place a tortilla in the pan.
  6. Cover tortilla with a thin layer of grated cheese.
  7. Spoon a layer of shredded chicken on top of your cheese layer, followed by another layer of cheese.
  8. Cover the mixture with another tortilla.
  9. Using a spatula, flip the tortilla so that both sides cook until slightly brown.
  10. Remove the quesadilla from heat and cut into fourths prior to serving.
