Salmon Cakes
Out of all the seafood out there, Salmon has got to be my favorite fish to create with, in the kitchen. It is always so flavorful and juicy, no matter how you cook it. I have been wanting to try my hand at salmon cakes for a while now. I love when I can make a quick and easy recipe, especially since my 2-year-old is usually running around in the kitchen energetically waiting for mommy’s attention. These salmon cakes are the definition of super easy and come together within a matter of minutes. Try pairing these yummy cakes with a side of green vegetables if you are looking for a light meal. I must say this was the first time I’ve made Salmon cakes and it won’t be the last.

INGREDIENTS
2 6 oz cans of wild salmon (skinless & boneless)
2 eggs
¾ bread crumbs
2 Tbsp old bay
1 tsp garlic powder
1 tsp onion powder
2 Tbsp mayonnaise
1 Tbsp olive oil
½ tsp cilantro
INSTRUCTIONS
Combine all ingredients in a large bowl and mix together well
Form into 6-8 patties
Turn on stove to medium heat
Drizzle olive oil into nonstick pan and spread around
Place each patty gently onto pan and cook 2-3 minutes per each side or until golden brown

This recipe turned out so delicious. I went ahead and added a side of salad and pasta to go with it. I’m thinking next time I will throw a bun in there and make Salmon burgers. The whole family seemed to enjoyed these Salmon cakes, making my night a success.
