Vegetable Fried Rice
I don’t know about you, but Chinese food is a guilty pleasure of mine. Anytime Chinese food is on the menu, I am always asking for some form of fried rice. Just thinking about it makes my mouth water. You can’t have a good Chinese meal without Fried Rice…in my opinion. It makes for a great main dish when in combination with meats such as chicken, pork or shrimp. It is also a great side dish that can be very filling. Skip the takeout restaurant next time and instead try your hand at homemade fried rice and keep a little money in your pocket.

INGREDIENTS
- 2 Cups White Rice-cooked
- 1 Cup Mixed Vegetables (carrots, peas, corn)
- 2 Eggs
- 1 Garlic Clove-diced
- 1 Small Onion-chopped
- 1 Tbsp Soy Sauce
- 1 Tbsp liquid Aminos
- 2 Tbsp Olive Oil
INSTRUCTIONS
- Scramble the eggs in the frying pan you plan to use to cook the rice. Set aside the eggs once they are done
- Sauté mixed vegetables, garlic and onion in olive oil until they are cooked well, 2-3min
- Mix in the scrambled eggs
- Add cooked rice and mix well
- Pour in the soy sauce and liquid aminos. (if you don’t have nor want to use liquid aminos, use 2 Tbsp of soy sauce)
- Mix all ingredients well, cook on low for 5-10 minutes
Servings: 8
Hint: Make sure to cook the rice ahead of time. Day old rice works great or even cooking it earlier that day. I have tried cooking the rice at the time of making the recipe, but the rice came out way too gooey and soggy. Making it ahead of time helps to dry out the rice to make for a better texture.
What are liquid aminos you ask? It’s just like soy sauce but has the added benefits of certain amino acids as well as plant proteins. This is for all you plant-based diet eaters! A healthy alternative if you want to skip the soy sauce all together.
